Bring the zing steak stir-fry

Sliced steak and onions get a brief dip in a tamari and lemon marinade, then hit the pan with pak choi. Dished up with gingery rice and topped with a cucumber and chilli dressing that brings punch as well as crunch, it’s like a wake-up call you actually want!

Before you start

  • 1 large saucepan
  • 1 large non stick frying pan
  • 2 medium mixing bowls

Marinade the steak

  • Peel the brown onions and thinly slice into rings.
  • On a separate board, trim any visible fat from the steaks then thinly slice against the grain.
  • In a mixing bowl, combine the onion rings and steak. Squeeze over the juice of the lemon (to taste) and sprinkle in half the tamari. Leave to marinade.

Cook the rice

  • Meanwhile, cook the rice in boiling water for 10-12 mins, then drain. Mix in the ginger & garlic paste.

Mix a spicy dressing

  • Dice the cucumber into ½cm chunks, and peel and finely dice the red onion. Finely dice the chillies (deseed for less heat).
  • In a bowl, combine the cucumber, onion and chillies (to taste) with the remaining tamari, the vinegar and 50ml water (100ml for 4 portions).

Sizzle the steak

  • Trim and thinly slice the pak choi.
  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Cook the steak and onion rings for 4-5 mins, turning occasionally and adding the pak choi for the final min.

Bring everything together

  • To serve, spoon the steak and onions over the rice, and drizzle over the dressing.
