Before you start

  • 1x baking tray lined with foil
  • 1x non-stick frying pan

Get grilling

  • Heat your grill to high.
  • Dice the aubergines into 2cm chunks.
  • Put the aubergines and tomatoes on a baking tray lined with foil, spritz with cooking spray and grill for 6-8 mins, until soft and charred.

Ace the base!

  • Meanwhile, peel the onions and cut each into 8 wedges. Discard the woody stalks from the middle of the cavolo nero, then thinly slice the leaves.
  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the cumin for 1 min, then add the onions and cavolo nero and cook for 5-7 mins.

Simmer the curry

  • Squeeze in the tomato purée and cook for 1 min.
  • Add the chickpeas and their water with the curry sauce. Pour in 100ml water, stir well and simmer for 4-5 mins, until the sauce has reduced slightly.

Plate up

  • Finely chop half the coriander and stir it into the frying pan with the grilled veg.
  • Dish up the curry, drizzle over the yogurt and scatter over the remaining coriander.
