Balsamic tomato & pea pasta

Treat yourself to this beautiful bowlful of summer! Onions, tomatoes and garden peas join penne pasta in a lip-smacking sauce, rich with basil, balsamic vinegar and sun-dried tomato paste, finished with yogurt, pea shoots and more basil. Bellissimo!

Ace the base

  • Peel and thinly slice the onions, then peel and crush the garlic.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions and garlic for 5-7 mins.

Chop, chop!

  • Meanwhile, halve the tomatoes, then finely chop half the basil leaves.

Boil the pasta

  • Cook the pasta in boiling water for 8-9 mins, then drain.

Simmer your sauce

  • While the pasta boils, stir the sun-dried tomato paste and vinegar into the frying pan and cook for 1 min.
  • Crumble in half the stock cube and pour in 200ml water (use all the stock and 300ml water for 4 portions). Add the chopped basil, stir well and simmer for 5-7 mins (6-8 mins for 4 portions) until the sauce has reduced slightly.

Finish & serve

  • Add the tomatoes and peas to the sauce, lightly season and cook for 2 mins. Remove from the heat, leave to cool slightly and stir in the pasta and yogurt.
  • To serve, top the pasta with the pea shoots and scatter over the remaining basil leaves.
