Boil the pasta

  • Cook the pasta in boiling water for 7-8 mins, then drain.

Ace the base!

  • Meanwhile, thinly slice the spring onions, and coarsely grate the carrots.
  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Fry the spring onions, carrots and mince for 4-5 mins, breaking up the mince with a wooden spoon until browned all over, then lightly season.

Sort your bolognese sauce

  • Add both pastes, the tamari, vinegar and paprika blend to the frying pan, stir well and cook for 1 min.
  • Squeeze in the passata, crumble in the stock and pour in 150ml water (200ml for 4 portions). Stir well and simmer for 4-5 mins until thickened slightly.

Finish & serve

  • At the same time, halve the tomatoes, and pick the basil leaves.
  • Stir the pasta and tomatoes into the sauce, then scatter over the basil leaves to serve.
