Smoky barbecue chicken & baby roasties

Roast the spuds

  • Heat your oven to 240ºC/fan 220ºC/gas 9.
  • Quarter the potatoes and spread them out on a large baking tray lined with baking paper. Spritz with cooking spray, lightly season and roast for 25-30 mins.

Sauté the chicken & veg

  • Meanwhile, peel and finely dice the onion. Deseed the peppers and dice into 2cm squares.
  • Spritz a large, deep non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the chicken for 5-7 mins until browned all over, then set aside and turn the heat down to medium.
  • Tip the onion, peppers and tomatoes into the pan. Fry for 5-7 mins.

Sort that sauce!

  • Add the tomato purée and paprika to the pan and cook for 1-2 mins until the purée begins to stick.
  • Crumble in half the stock cube (the whole stock cube for 4 portions), pour in the passata and 200ml water (300ml for 4 portions) and stir well.
  • Return the chicken to the pan and simmer for 6-8 mins, until the chicken is cooked through and the sauce has thickened slightly.

Simmer the beans

  • At the same time, trim the green beans.
  • Cook the beans in boiling water for 3-4 mins, then drain.

Bring everything together

  • Add the roast potatoes to the sauce and stir well.
  • Serve the smoky barbecue chicken and roasties with the green beans and top with dollops of yogurt.
