Beef & mushroom stew with horseradish mash

With lean beef mince, sliced chestnut mushrooms, carrot and onion, a garlicky, herby gravy, plus a side of peppy potato mash flecked with chopped chives, this homey and hearty stew will satisfy your appetite and your soul.

Make your mash

  • Cut the potatoes into 2cm cubes, then cook in boiling water for 15-18 mins. Drain, return to the pan and mash with a splash of water, then lightly season.

Prep the veg

  • Meanwhile, peel and thinly slice the onions. Dice the carrots into 1cm cubes, and thinly slice the mushrooms.

Time to fry!

  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Fry the onions, carrots and mushrooms for 5-7 mins.
  • Add the mince and cook for 4-5 mins, leaving it in chunky pieces, until browned all over.

Stir up your stew

  • Add the tomato purée, garlic & herb paste and Hendersonʼs Relish to the pan. Crumble in the stock cube, pour in 250ml boiled water (350ml for 4 portions) and stir well. Simmer for 4-5 mins (5-6 mins for 4 portions), until the sauce has reduced and the beef is cooked through.
  • Remove from the heat and leave to cool a little, then lightly season and stir in the yogurt.

Bring everything together

  • Finely chop the chives, then stir half into the mash along with the horseradish.
  • Dish up the stew and horseradish mash, then sprinkle over the remaining chives to serve.
