Beef goulash pasta

We’ve given hearty Hungarian goulash a twist by combining it with pasta! Our take on the classic stew features quick-cook beef mince, onion, green pepper and tomatoes, flavoured with garlic, thyme and paprika. A drizzle of yogurt and a sprinkling of parsley add a final flourish to this fusion feast.

Start that sauce

  • Peel and finely dice the onions, then deseed the peppers and dice into 1cm squares. Peel and crush the garlic, and finely chop the thyme leaves.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions and peppers for 5-7 mins.

Sizzle the mince

  • Tip in the mince and fry for 3-4 mins, breaking it up with a wooden spoon until browned all over, then stir in the garlic, thyme, paprika and tomato purée and cook for 2 mins.
  • Stir in the passata, crumble in half the stock cube and pour in 250ml water (use all the stock and 350ml water for 4 portions). Stir well and simmer for 6-8 mins.

Boil your pasta

  • Meanwhile, cook the pasta in boiling water for 8-9 mins, then drain.

Plate up

  • Finely chop the chives (or half the parsley). Take the frying pan off the heat and leave to cool a little, then mix in the pasta, half the chives (or all the chopped parsley) and half the yogurt.
  • To serve, scatter the goulash pasta with the remaining chives (or parsley) and drizzle over the rest of the yogurt.
