Rice ’n’ easy cacciatore-style chicken

‘Cacciatore’ means ‘hunter’ in Italian, and you’ll certainly want to chase down this one-pot wonder! Gorgeously garlicky and finished with a flourish of basil, this dish blends chicken breast, peppers and rice to create a comforting, rustic meal that’s guaranteed to hit the spot in true hunter style.

Before you start

  • 1 large non stick frying pan with lid

Get prepped!

  • Peel and thinly slice the onions, then deseed the peppers and thinly slice them, too. Finely chop the basil.

Sizzle & stir

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers and chicken for 5 mins.
  • Squeeze in both pastes and the tomato purée, scatter in the rice and stir well. Cook for 1 min.

Simmer the rice

  • Add the stock, pour in 400ml water (600ml for 4 portions) and squeeze in the passata. Stir well.
  • Cover with a lid and simmer for 10-12 mins, until the rice is cooked through and the stock has been absorbed.
  • Stir in half the basil.

Herb & serve

  • Scatter the remaining basil over the rice and serve.
