Southern-style chicken & sweet potato bake

Before you start

  • 1 large baking tray
  • 1 large mixing bowl

Get the wedges going

  • Heat your oven to 220ºC/fan 200ºC/gas 7. Cut the sweet potatoes into wedges.
  • Put the wedges on a large baking tray lined with baking paper, spritz with cooking spray and roast for 10 mins.

Spice things up!

  • Meanwhile, peel and halve the onions, then cut 1 and a half (2 for 4 portions) into wedges. Deseed the peppers and dice into 3cm squares.
  • Add the onion wedges, peppers, tomatoes, garlic paste, Cajun spice and chicken breasts to the baking tray, spritz with cooking spray and mix well to coat.
  • Lightly season to taste with salt and roast for 20 mins.

Make your slaw

  • At the same time, thinly slice the remaining half onion (whole onion for 4 portions) and coarsely grate the carrots. Core, trim and thinly slice the cabbage. Finely chop the parsley.
  • In a mixing bowl, combine the slaw ingredients. Grate in the lime zest (from both limes for 4 portions), then squeeze in the juice (to taste).
  • Add the yogurt, lightly season and mix well.

Add your finishing touches

  • Use 2 forks to shred the chicken, then mix it back into the roasted vegetables. Serve the chicken and sweet potato bake with the slaw.
