Cooking Instructions

The protein cooking time listed in this recipe has been updated.

As of December 2025, we’ve revised cooking times for all our proteins to reflect improved food safety guidance.

Check out the latest recommended times in our Cooking Guidelines.

Before you start

  • 1x large non-stick frying pan
  • 1x saucepan

Prep the veg

  • Halve the courgettes lengthways and slice into ½cm half-moons.
  • Peel and thinly slice the onions, then deseed and thinly slice the peppers.

Sizzle & stir

  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the chicken for 2 mins until browned all over.
  • Tip in the veg and cook for 5-7 mins.

Turn up the flavour!

  • Add the ginger & garlic paste and spice mix to the pan. Cook for 1 min.
  • Pour in the passata and 150ml water (250ml for 4 portions). Simmer for 6-8 mins, until the sauce has reduced slightly and the chicken is cooked through.

Sort the couscous

  • Meanwhile, cook the couscous in boiling water for 8-9 mins, then drain.
  • Finely chop the parsley, coriander and spinach, then stir the herbs and spinach through the couscous.

Dish up

  • Serve the saucy chicken with the herby couscous.
