Pronto chicken & courgette pesto pasta

This fast and furious dish really delivers! Sizzled chicken, courgette and onion are swept up in a silky basil pesto sauce, then stirred through with pasta, edamame and (secret umami ingredient!) a dollop of miso. A scattering of radish and fresh basil squeaks just in before the 20-minute buzzer sounds!

Prep your veg

  • Peel the onions and cut each into 8 wedges. Halve the courgettes lengthways and slice into ½cm half-moons.

Create a stir!

  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions, courgettes and chicken for 5-7 mins until softened.

Boil the pasta

  • Meanwhile, cook the pasta in boiling water for 9-10 mins, adding the edamame for the final 2 mins, then drain.

Simmer your sauce and prep the pesto

  • Crumble in half the stock cube, pour in 150ml water (use all the stock and 200ml water for 4 portions) and stir well. Simmer for 5-7 mins, until the chicken is cooked through and the liquid just coats the veg.
  • At the same time, gather the spinach into a tight bunch and very thinly slice, as well as three-quarters of the basil, then add to a bowl with the flavour pastes and yogurt. Stir until the yogurt turns green.

Finish & serve

  • Trim and cut each radish into 6 wedges.
  • Stir the pesto yogurt mix through the pasta and serve, then scatter over the radish wedges and remaining basil leaves.
