Speedy chicken saag with rice

Scratch that takeaway itch with this fab fakeaway – on your plate in 20 minutes flat! Ginger, garlic, cumin and coriander sizzle with chicken chunks, onions and tomatoes, then in goes our ready-to-cook curry sauce. A simmer with spinach, a swirl of yogurt and side of fluffy rice and you're good to go!

Before you start

  • 1 large saucepan
  • 1 large non stick frying pan

Boil the rice

  • Cook the rice in boiling water for 10-12 mins, then drain.

Start the curry

  • Meanwhile, peel and finely dice the onions.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat.
  • Fry the onions, chicken and tomatoes for 5-7 mins.

Things get saucy!

  • Gather the spinach into a tight bunch and thinly slice.
  • Add the ginger and garlic paste, ground cumin and ground coriander to the pan. Cook for 1 minute, then add the curry sauce, 150ml water (200ml for 4 portions) and the spinach, then simmer for 5-7 mins until the chicken is cooked through.

Plate up

  • Remove the pan from the heat and leave to cool slightly, then stir in the yogurt.
  • Serve the curry on a bed of the rice.
