Chilli beef jackets with sweetcorn salsa

Some nights just demand a comforting jacket potato, don’t they (wet Wednesdays, we’re looking at you)? And these baked beauties – filled with a gently warming beef mince chilli, topped with a colourful corn, coriander and red onion salsa and drizzled with Greek-style yogurt – are spuds you’ll definitely like!

Get the potatoes going

  • Heat your oven to 220ºC/fan 200ºC/gas 7/air fryer 190ºC.
  • Halve the potatoes lengthways and score a diamond pattern into the cut sides, making sure you donʼt slice all the way through to the skin.
  • Spritz the potatoes with cooking spray, put them cut-sides down on a baking tray lined with baking paper (or into the air-fryer basket) and roast for 35-40 mins (air-fry for 25-30 mins).

Ace the base

  • Meanwhile, peel and finely dice the onions, and deseed the peppers and dice into 2cm squares.
  • Spritz a non-stick saucepan with cooking spray and put it over a medium-high heat. Tip in three-quarters of the onions, the peppers and garlic paste, and cook for 6-8 mins.

Sizzle the mince

  • Add the mince, spice mix and tomato purée to the pan. Stir well, breaking up the mince with a wooden spoon, and cook for 3-4 mins.
  • Crumble in the stock, add the chopped tomatoes and 100ml water (150ml for 4 potions) and stir well. Lightly season and simmer for 8-10 mins (10-12 mins for 4 portions) until slightly thickened.

Itʼs salsa time!

  • Roughly chop the coriander, and drain the sweetcorn.
  • Ina small bowl, combine the remaining onions with the coriander and sweetcorn. Lightly season to taste with salt and mix well.

Stack your jackets

  • Top the baked potatoes with a generous helping of chilli beef. Spoon over the sweetcorn salsa and add a swirl of yogurt.
