Cooking Instructions

The protein cooking time listed in this recipe has been updated.

As of December 2025, we’ve revised cooking times for all our proteins to reflect improved food safety guidance.

Check out the latest recommended times in our Cooking Guidelines.

Get those wedges going

  • Heat your oven to 240ºC/fan 220ºC/gas 9/air fryer 200ºC.
  • Cut the potatoes into wedges and put them on a baking tray lined with baking paper (or into the air-fryer basket). Spritz with cooking spray, lightly season and sprinkle over a pinch of the spice mix, then roast for 25-30 mins (air-fry for 18-20 mins).

Prep & soften the veg

  • Meanwhile, peel and finely dice the onions. Deseed the peppers and chop into 1cm squares, and peel and crush the garlic.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Tip in three-quarters of the onions and all the peppers and cook for 6-8 mins.

Add some oomph!

  • Boil a half-full kettle, then drain and rinse the beans.
  • Add the garlic to the frying pan and cook for 1 min, then tip in the beans, half the remaining spice sachet (the rest of it for 4 portions), the lentils and the tomato purée. Stir to coat, then add the chopped tomatoes.
  • Sprinkle in the stock, pour in 350ml boiled water (500ml for 4 portions) and stir well. Simmer for 15-18 mins, until the lentils are soft and the sauce coats the beans.

Char the corn

  • At the same time, drain the sweetcorn. Finely chop half the coriander, and quarter the lime.
  • Spritz a non-stick frying pan with cooking spray and put it over a medium-high heat. Tip in the corn and cook for 4-5 mins, until lightly charred in places.

Add your final touches

  • Stir the chopped coriander into the chilli, then spoon the chilli over the wedges. Top with the corn and the remaining onions and coriander leaves.
  • Serve with the lime quarters for squeezing.
