Chilli tofu flash-fry with noodles

This super-speedy, surprisingly simple and seriously tasty stir-fry is proof that big flavour doesn’t have to mean big effort. Tofu, red pepper, chestnut mushrooms and rice noodles are simmered in a punchy sauce made with sliced chilli and a squeeze of our sun-dried tomato and harissa pastes, then sprinkled with spring onions. Before you start

  • 1 medium saucepan
  • 1 large non stick frying pan

Start prepping

  • Thinly slice the chillies (deseed for less heat), then peel the onions and cut into wedges. Deseed and thinly slice the peppers, then thinly slice the mushrooms and spring onions.

Sort the noodles & tofu

  • Cook the noodles in boiling water for 3-4 mins. Drain, then rinse.
  • Meanwhile, drain the tofu, pat dry with kitchen roll and cut into 1cm cubes.
  • Put a large non-stick frying pan over a medium-high heat. Tip in the chillies (to taste) and tofu, spritz with cooking spray and lightly season to taste with salt. Cook for 4-5 mins, turning occasionally, until the tofu is golden.

Add some oomph!

  • Tip the onions, peppers and mushrooms into the pan and cook for 3 mins. Stir in all 3 pastes and cook for 1 min.
  • Crumble in half the stock cube, pour in 200ml water (use all the stock and 250ml water for 4 portions) and stir well. Add the noodles and warm through for 1 min.

Plate up

  • To serve, top the chilli tofu noodles with the spring onions.
