Beef lasagne with charred broccoli

If a bubbling-hot lasagne is your household’s love language, this might just give you all butterflies… Our lightened-up recipe features lean beef mince, onion and pepper in a flavoursome garlic and herb tomato sauce, a bechamel-style topping, and a colour-pop side of roasted broccoli.

Ace the base!

  • Peel the onions, deseed the pepper and finely dice both. Peel and crush the garlic.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions for 3-4 mins, then add the pepper, garlic and mince and cook for 3-4 mins, breaking up the mince with a wooden spoon, until browned.

Simmer the sauce

  • Stir the herbs and tomato purée into the pan and cook for 1-2 mins, until the veg and mince are coated.
  • Pour in the chopped tomatoes and 250ml water (350ml for 4 portions). Crumble in the stock, stir well and simmer for 8-10 mins (10-12 mins for 4 portions) until the sauce coats the mince.

Build your lasagne

  • Meanwhile, heat your oven to 200ºC/fan 180ºC/gas 6.
  • In a small bowl, whisk 1 egg (2 eggs for 4 portions – save the rest for another dish) into the yogurt.
  • Spoon half the bolognese into a 20cm x 15cm ovenproof dish (30cm x 20cm for 4 portions). Cover with some lasagne sheets, then spoon in the remaining bolognese and cover with more pasta.
  • Top the lasagne with the yogurt mixture and bake for 15 mins until golden.

Roast the broccoli

  • At the same time, cut the broccoli into florets and put them on a baking tray lined with baking paper. Spritz with cooking spray and roast for 10-15 mins.

Plate up

  • Serve the lasagne with the charred broccoli.
