Cod donburi rice bowl

Donburi, be happy! Put a smile on your face by adding our mouth-watering miso-rubbed cod meal to your order. It’s served with gingery, garlicky stir-fried spring onions, long-stem broccoli, baby tomatoes and carrot, and a whole heap of fluffy rice.

Prep & fry

  • Heat your grill to high.
  • Dice the carrots into roughly ½cm cubes. Thinly slice two-thirds of the spring onions and set aside, then chop the rest into roughly 2cm pieces. Trim the broccoli and slice into roughly 2cm pieces.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Tip in the carrot, roughly chopped spring onion and the broccoli and cook for 1 min.
  • Pour in 50ml water and simmer for 2 mins.

Boil the rice

  • Cook the rice in boiling water for 10-12 mins, then drain.

Grill your fish

  • Meanwhile, put the cod on a baking tray lined with foil and rub with the miso paste. Spritz with cooking spray and grill for 10-12 mins until cooked through and flaking.

Add some oomph!

  • At the same time, boil a half-full kettle. Add the ginger & garlic paste to the veg pan along with half the chilli flakes sachet (all of it for 4 portions), to taste. Stir to coat the veg and cook for 1 min.
  • Crumble in half the stock cube and pour in 250ml boiled water (use all the stock and 350ml water for 4 portions). Sprinkle in the vinegar and tamari and stir well. Add the tomatoes and simmer for 6-8 mins.

Bring it all together

  • Dish up the cod, rice and vegetables. Pour over the broth and scatter over the thinly sliced spring onions to serve.
