Ultimate cottage pie

The comfort food favourite just got a Slimming World makeover. Minced beef, carrots and onions, simmered in a rich gravy flavoured with thyme and a splash of Henderson’s Relish, snuggle under a cosy blanket of potato and sweet potato mash. Served simply with green beans, itʼs ‘home sweet homeʼ in food form!

Sort your mash

  • Peel the potatoes and sweet potatoes and cut into 2cm cubes, then cook in boiling water for 15-18 mins.
  • Drain, return to the pan and mash together, then lightly season.

Dice & slice

  • Meanwhile, peel and finely dice the onions. Dice the carrots into 1cm cubes.
  • Finely chop the thyme leaves.

Cook the filling

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions and carrots for 7-8 mins, adding a splash of water if they start to catch.
  • Add the mince and thyme and cook for 2 mins, breaking up the mince with a wooden spoon, then tip in the tomato purée, passata and Hendersonʼs Relish.
  • Crumble in half the stock cube (the whole stock cube for 4 portions), pour in 200ml water (300ml for 4 portions) and stir well, then simmer for 10 mins.

Time for a grilling!

  • Heat your grill to high. Mix the yogurt into the mash, then spoon the mince mixture into an ovenproof dish and top with the mash.
  • Grill for 5 mins, until the topping begins to turn golden brown.

Simmer the beans & serve

  • At the same time, trim the green beans, then cook in boiling water for 3-4 mins and drain.
  • Serve the cottage pie with the beans.
