Cajun spiced chicken with broccoli

Our bespoke Cajun spice brings a little bayou magic to this silky, saucy chicken dish, as a heady mix of black pepper, fennel, cumin, cardamom, oregano and thyme mingle with onions, peppers and sweetcorn. A swirl of yogurt cools everything down, ready to plate with filling brown rice and spiced broccoli.

Before you start

  • 2x saucepans
  • 1x non-stick frying pan

Sort your rice

  • Cook the rice in boiling water for 25-30 mins, then drain.

Ace the base!

  • Meanwhile, peel and thinly slice the onions. Deseed the peppers and dice into 2cm squares. Peel and finely chop the garlic, then drain the sweetcorn.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions, peppers, garlic and sweetcorn with the chicken for 5-7 mins until everything’s browned.

Simmer the chicken

  • Add the vinegar and all but a pinch of the Cajun spice to the frying pan. Stir well, then crumble in half the stock cube and pour in 200ml water (use all the stock and 250ml water for 4 portions). Simmer for 8-10 mins (10-12 minutes for 4 portions) until the chicken is cooked through and the sauce has reduced to loosely coat the veg.
  • Remove from the heat and allow to cool slightly.

Simmer & spice the broccoli

  • Meanwhile, trim the broccoli and cook in boiling water for 3-4 mins, then drain and return to the pan.
  • Sprinkle the remaining Cajun spice mix over the broccoli and toss to coat.

Bring it all together

  • Stir the yogurt into the frying pan.
  • Serve the Cajun chicken with the rice and spiced broccoli.
