Set the pasta simmering

  • Cook the pasta in boiling water for 8-9 mins, then drain.

Create a stir!

  • Meanwhile, peel the onions and cut each into 8 wedges. Peel and crush the garlic, and finely chop half the basil.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, chicken and tomatoes for 5 mins.
  • Add the garlic and fennel seeds and cook for 2 mins.

Sauce things up

  • Squeeze in the tomato paste and passata. Crumble in half the stock cube, then pour in 250ml water (use all the stock and 350ml water for 4 portions) and stir well.
  • Simmer for 5 mins, until the chicken is cooked through and coated with sauce, adding the spinach for the final min.

Bring everything together

  • Remove the pan from the heat, leave to cool slightly and stir in the pasta, chopped basil and yogurt.

Herb & serve

  • Sprinkle over the remaining basil leaves and serve.
