Smoky chipotle chicken pasta

Before you start

  • 1 large saucepan
  • 1 large non stick frying pan

Get prepping

  • Peel the onions and cut each into 8 wedges, then deseed the peppers and dice into 1cm squares. Thinly slice the mushrooms.

Ace your base!

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers, mushrooms and chicken for 5-6 mins.
  • Add the ground cumin, chipotle(to taste) and garlic paste and cook for 1 min.

Simmer the sauce

  • Crumble in half the stock cube (all of it for 4 portions), pour in 250ml water (400ml for 4 portions) and simmer for 6-7 mins, until the chicken is cooked through and the sauce has reduced by half.

Boil the pasta

  • Cook the pasta in boiling water for 9-10 mins, then drain.
  • Meanwhile, thinly slice the spring onions and finely chop the coriander.

Plate up

  • Remove the frying pan from the heat and leave to cool slightly, then stir in the yogurt and pasta.
  • Scatter over the spring onions and coriander and serve.
