Cuban picadillo

Your tastebuds will be Havana good time with this moreish Cuban mince dish! Fried onions, peppers and potatoes are perked up with capers, cumin and oregano, then sizzled with beef mince in a tomatoey sauce. Rice soaks up the gorgeous fiesta flavours.

Before you start

  • 1 large saucepan
  • 1 large non stick frying pan

Prep the veg

  • Peel the onions and dice into large pieces, then deseed the peppers and dice into 2cm squares.
  • Cut the potatoes into 1cm cubes. Peel and crush the garlic.

Ace your base

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat.
  • Fry the onions, peppers and potatoes for 3-4 mins.

Turn up the flavour!

  • Add the tomatoes, garlic, mince, ground cumin and oregano and cook for 3-4 mins.
  • Tip in the capers and passata. Crumble in half the stock cube, pour in 350ml water (use all the stock and 500ml water for 4 portions) and stir well. Simmer for 8-10 mins until the potatoes and mince are cooked through.

Boil your rice

  • Meanwhile, cook the rice in boiling water for 10-12 mins, then drain.

Finish & serve

  • At the same time, finely chop the coriander and add three-quarters to the picadillo.
  • Serve alongside the rice and scatter over the remaining coriander.
