Cheat's rapid-fire curried chicken noodles

When it’s been a bit of a day, this weeknight winner will fly to your rescue. Stir-fried chicken, carrots, onions, peppers and pak choi are brought to life by five-spice, tamari and our very own curry sauce, then tumbled with wholewheat noodles. Pep it up with spring onions and fresh coriander, and satisfaction is served!

Chop, chop!

  • Halve the carrots lengthways and slice into ¼cm half-moons. Peel the onions and cut each into 8 wedges, then deseed and thinly slice the peppers. Trim the broccoli (or pak choi) and cut into bite-size pieces.

Start your stir-fry

  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the chicken with the carrots, onions, peppers and broccoli (or pak choi) for 6-8 mins, until the chicken is browned and the veg are softened.

Boil the noodles

  • Meanwhile, cook the noodles in boiling water for 3-4 mins. Drain, then rinse.

Time to simmer

  • Add the five-spice and tamari to the frying pan and cook for 1 min.
  • Pour in the curry sauce along with 100ml water (150ml for 4 portions) and simmer for 2-3 mins, until hot through.

Finish & serve

  • While the sauce simmers, thinly slice the spring onions, and finely chop the coriander.
  • Stir the noodles through the saucy chicken and veg. To serve, sprinkle over the spring onions and coriander.
