One-pot chicken & mango curry

We love a kitchen hack, and this all-in-one way to cook up a mild chicken curry is a keeper! Onions, red peppers and baby tomatoes are softened with cumin seeds, curry powder and ginger. They’re simmered with basmati rice, sliced chicken breasts and exactly the right amount of stock, then finished with mint, coriander, diced mango and yogurt for your easiest curry ever.

Before you start

  • 1 large saucepan

Sort the prep

  • Peel and finely dice the onions, then deseed the peppers and dice into 1cm squares. On a separate board, cut the chicken into thin strips.
  • Dissolve half the stock cube in 400ml boiled water (use all the stock in 700ml water for 4 portions).

Soften & spice

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers and tomatoes for 5 mins.
  • Stir in the ginger & garlic paste, curry powder and cumin seeds and cook for 3 mins.

Simmer the curry

  • Tip the rice into the pan, pour in the stock and stir well.
  • Place the chicken on top of the rice, bring to the boil and cover with a tight-fitting lid (or foil). Simmer over a very low heat for 20-25 mins, stirring halfway, until the chicken is cooked through.

Add your finishing touches

  • Meanwhile, finely chop the mint leaves and coriander. Stone the mango and dice the flesh into 1cm cubes.
  • Take the frying pan off the heat and leave to cool slightly, then stir in the chopped herbs and yogurt.
  • To serve, scatter the diced mango over the chicken curry.
