Cheat’s duck cassoulet

Eat more beans, they say. OK, let’s cassoulet! Cannellini beans soak up all the beautiful flavour in this easy-breezy French-style duck stew, packed with carrot, baby tomatoes, spinach and onion, and flavoured with a generous hit of herbs and garlic. Bon appetit!

Before you start

  • 1x medium non-stick frying pan

Dice & fry

  • Peel and finely dice the onions, and dice the carrots into ½cm cubes.
  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions, carrots and tomatoes for 5-7 mins.

Simmer your cassoulet

  • Finely chop the thyme leaves.
  • Add the thyme and duck to the pan along with the tomato purée and garlic & herb paste. Lightly season and cook for 2 mins, until the duck and thyme are beginning to catch a little.
  • Tip in the beans and their water, crumble in half the stock (use all the stock for 4 portions) and pour in 100ml water. Stir in the spinach and simmer for 6-8 mins, until the duck is cooked through and the sauce reduces to coat the veg.

Rest & chop

  • Remove the pan from the heat and leave to cool slightly.
  • Finely chop the parsley.

Add your final flourishes

  • Stir half the parsley and the yogurt into the cassoulet, then scatter the remaining parsley on top and serve.
