Jerk-style chicken with sweet potato wedges

Jerk-style seasoned chicken brings the sunshine in a dish that’s packed with juicy tomatoes and served with golden sweet potato wedges. There’s even a twist on callaloo – a delicious side of garlicky greens – for a vibrant Caribbean-inspired plate!

Before you start

  • 1x baking tray lined with baking paper
  • 1x large saucepan

Time to roast

  • Heat your oven to 230ºC/fan 210ºC/gas 8.
  • Cut the sweet potatoes into wedges. Put them on a baking tray lined with baking paper and scatter over a pinch of the jerk seasoning.
  • Add the chicken to the tray and scatter over half the remaining jerk seasoning.
  • Spritz everything with cooking spray and roast for 20-25 mins until the chicken is cooked through and the wedges are soft.

Start the veg

  • Meanwhile, peel and thinly slice the onions. Finely chop the thyme leaves.
  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions, tomatoes and thyme for 4-5 mins until softened.

Cook your ‘callalooʼ

  • At the same time, gather the spinach into a tight bunch and chop. Discard the woody stalks from the middle of the kale, then chop the leaves.
  • Add the spinach, kale and garlic paste to the onions. Crumble in the stock cube and pour in 100ml water (150ml for 4 portions).
  • Simmer for 4-5 mins, until the greens are completely wilted and the liquid has reduced slightly.

Dish up

  • Serve the chicken and wedges with the callaloo.
