Korean loaded fries

Korean loaded fries

This scrumptious pile-on is unfussy, unapologetic… and unreal! What it lacks in airs and graces, it more than makes up for in punchy flavour. Potato and carrot chips are tossed with gochujang, then tumbled with sautéed onions, chestnut mushrooms and kimchi, plus juicy tomatoes, coriander and chilli. Drizzle on spiced yogurt, scatter spring onions and dig in.

Cooking Instructions

Before you start

  • 1 large baking tray
  • 1 large non stick frying pan
  • 1 large mixing bowl

Get the fries going

  • Heat your oven to 220ºC/fan 200ºC/gas 7/air fryer 200ºC. Cut the potatoes and carrots into fries.
  • Put the fries on a baking tray lined with baking paper (or into the air-fryer basket), spritz with cooking spray and lightly season. Roast for 25-30 mins (air-fry for 18-20 mins).
  • Toss the chips with two-thirds of the gochujang.

Chop, chop!

  • Meanwhile, peel and thinly slice the onions, then thinly slice the mushrooms. Quarter the tomatoes. Finely chop the coriander, and finely dice the chillies (deseed for less heat). Thinly slice the spring onions.

Sizzle the onions

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions for 10 mins, adding a splash of water if they start to catch.
  • Add the mushrooms and kimchi and cook for 3-4 mins.

Bring everything together

  • In a large mixing bowl, toss the fries with the onions, mushrooms and kimchi. Stir in the tomatoes, half the coriander and all the chillies (to taste).
  • Mix the remaining gochujang into the yogurt.

Add your finishing touches

  • Dish up the fries, then drizzle over the yogurt. To serve, scatter with the remaining coriander and the spring onions.
