Luscious lemon & chilli prawn pasta

Take your taste buds to southern Italy, where this dish was born. We’ve added extra filling power to the classic chilli/lemon/prawn combo with lightly cooked summer veg – onions, courgette, spinach and tomatoes – tossed through lashings of spaghetti. Delizioso!

Char the veg

  • Heat your grill to high. Peel the onions and chop each into 6 wedges. Cut the courgettes into ½cm-thick slices, and halve or quarter any larger tomatoes.
  • Put the onions, courgettes and tomatoes on a baking tray lined with foil, spritz with cooking spray and grill for 10-12 mins until soft and beginning to blacken.

Chop, chop!

  • Meanwhile, peel and crush the garlic, and thinly slice the chilli (deseed for less heat). Roughly chop the spinach, finely chop the parsley, and zest, halve and juice the lemon.

Cook the pasta & spinach

  • Cook the pasta in boiling water for 7-8 mins, adding the spinach for the final 30 seconds. Drain, reserving 200ml cooking water (300ml for 4 portions)

Sauce ingredients, assemble!

  • At the same time, spritz a large, deep non-stick frying pan with cooking spray and put it over a medium heat. Fry the prawns for 3 mins.
  • Add the garlic and half the chilli (to taste) and cook for 1 min.
  • Stir in the grilled veg, crumble in the stock and pour in 150ml of the reserved pasta water (200ml for 4 portions). Stir well and simmer for 3-4 mins.
  • Add half the parsley and the lemon juice (to taste), then lightly season.

Finish & serve

  • Add the pasta and spinach to the frying pan and mix well to coat, adding some of the remaining reserved pasta water to thin the sauce if necessary.
  • Serve with the lemon zest, and the remaining chilli (to taste) and parsley scattered on top.
