Super-savoury pork & mushrooms with onion rice

This is feel-good food at its most satisfying – tender pork strips, mushrooms and spinach in a garlicky sauce with deep Marmite flavours. Add fluffy rice mixed with caramel onions and our easy-peasy herb paste, and you’re halfway to heaven!

Before you start

  • 1 large saucepan
  • 1 large non stick frying pan

Set the rice simmering

  • Cook the rice in boiling water for 10-12 mins, then drain.

Add some oomph!

  • At the same time, peel and thinly slice the onions. Finely chop the parsley.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions for 6-8 mins, adding a splash of water if they start to stick and stirring in the garlic & herb paste for the final min.
  • Add the onions and half the parsley to the rice.

Prep the veg

  • Thinly slice the mushrooms, then peel and crush the garlic.
  • Dissolve half the stock cube in 150ml boiled water (dissolve all of it in 250ml for 4 portions).

Sauce & stir

  • Return the frying pan to the heat, spritz with cooking spray and tip in the mushrooms, garlic and pork strips. Cook for 4-5 mins.
  • Pour in the stock, stir in the Marmite and spinach and cook for 2-3 mins, until the sauce has slightly reduced.

Dish up

  • Serve the pork with the rice and sprinkle the remaining parsley on top.
