Glazed cod with creamed spinach & mustard mash

Chef’s kiss to whoever first glazed chunky cod with super-savoury Marmite – a genius move that elevates the eating experience. A pinch of nutmeg in the creamed spinach and dollop of mustard in the mash up the ante. Proper posh nosh in under half an hour!

Before you start

  • 2x medium saucepan
  • 1x baking tray lined with baking paper

Make your mash

  • Heat your oven to 220ºC/fan 200ºC/gas 7.
  • Peel the potatoes and cut them into 2cm cubes, then cook in boiling water for 15-18 mins.
  • Drain, return to the pan and mash with the mustard and a splash of water, then lightly season.

Prep the carrots and fish

  • While the potatoes are boiling, halve the carrots lengthways and slice into ½cm half-moons.
  • Put the carrots on a baking tray lined with baking paper and spritz with cooking spray. Lay the cod fillets on the tray and rub with Marmite to make a thin glaze.

Get roasting!

  • Roast in the oven and bake for 14-16 mins, until the fish is cooked through and flaking.

Cream the spinach

  • At the same time, finely chop the spinach.
  • Put a large non-stick saucepan over a medium-high heat and tip in the spinach with a pinch of nutmeg (to taste). Stir to wilt, then add a splash of water and cook for 3-4 mins, until completely wilted.
  • Remove from the heat and allow to cool slightly, then lightly season and stir in the yogurt.

Plate up

  • Finely chop the chives.
  • Dish up the mash with the carrots and creamed spinach. Lay the cod on top of the spinach and scatter over the chives.
