‘Marry meʼ chicken pasta

Itʼs an enduring TikTok sensation, and youʼll only need a mouthful to understand why! Slow-roasted tomatoes are key to the flavour – as is tender chicken cooked with garlic and thyme. They’re served with pasta spirals, spinach and cavolo nero in a creamy sauce, with lashings of basil and lemon. One word – wow!

Get the tomatoes in the oven

  • Heat your oven to 160ºC/fan 140ºC/gas 3.
  • Halve the tomatoes and put them on a baking tray lined with baking paper. Spritz with cooking spray, lightly season and cook for 25 mins.

Start the sauce

  • Meanwhile, peel and thinly slice the garlic. Finely chop the thyme leaves. Discard the woody stalks from the middle of the cavolo nero, then thinly slice the leaves.
  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Fry the chicken breasts for 3-4 mins on each side until golden brown, then remove and set aside.
  • Keep the pan over a medium heat, spritz with cooking spray and tip in the garlic. Cook for 1 min.
  • Add the thyme, spinach and cavolo nero. Cook for 3-4 mins until wilted, then add the tomato paste and paprika blend.

Simmer the chicken & pasta

  • Crumble the stock into the pan, pour in 400ml boiled water and stir well.
  • Return the chicken to the pan and simmer for 10-12 mins until cooked through, then remove from the heat.
  • At the same time, cook the pasta in boiling water for 8-9 mins, then drain.

Ramp up the flavour!

  • Zest and quarter the lemon. Finely chop half the basil leaves.
  • Transfer the chicken breasts to a separate board, lightly season and slice.
  • Stir the chopped basil into the sauce along with the yogurt, pasta and a squeeze of lemon juice (to taste).

Scatter & serve

  • Top the pasta with the chicken and roasted tomatoes, then scatter over the zest and remaining basil leaves. Serve with the lemon wedges.
