Rapido Mexican mince with rice

Take a trip down Mexico way! Beef mince is fried with onion, green pepper, garlic and Mexican spices, then simmered with black beans and passata, dished up with fluffy rice and scattered with jalapeños. Best of all, the vibe might be ‘long-haul’, but timings-wise it’s a ‘short hop’ and ready in 20 mins.

Set the rice simmering

  • Cook the rice in boiling water for 10-12 mins, then drain.

Sizzle your veg & mince

  • Meanwhile, peel and finely dice the onions. Deseed the peppers and dice into 1cm squares.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers and beef for 6 mins, breaking up the mince with a wooden spoon, until browned.

Spice things up!

  • Stir in the spice mix and garlic paste and cook for 1 min.
  • Add the tomato purée, passata and the beans and their water. Simmer for 4-6 mins until the sauce coats the mince and it's cooked through.

Scatter & serve

  • Spoon the Mexican mince over the rice, scatter with the jalapeños and serve.
