Mexican veg & bean traybake

Hey, fancy heading down Mexico way – in a single tray? Sprinkle baby potatoes, red pepper, onion and mushrooms with our bespoke Mexican spice mix, plus smoked paprika and oregano, then roast. Next, stir in kidney beans, passata and stock and bake some more. Top with chilli, yogurt and fresh coriander and settle down to a fuss-free feast with fiesta vibes!

Before you start

  • 1 medium oven proof baking dish.

Get the potatoes going

  • Heat your oven to 220ºC/fan 200ºC/gas 7.
  • Halve the potatoes, then put them in an ovenproof dish, spritz with cooking spray and lightly season. Roast for 15 mins.

Add the veg & spice

  • Meanwhile, deseed and thickly slice the pepper, then peel the onion and cut into 8 wedges. Quarter the mushrooms.
  • Add the pepper, onion and mushrooms to the dish of roasted potatoes. Sprinkle over the spice mix and paprika blend, mix well, spritz with cooking spray and roast for 15 mins.

Sort that sauce

  • At the same time, drain and rinse the beans. Dissolve half the stock cube in 150ml boiled water.
  • Stir the beans, passata and stock into the ovenproof dish and bake for 10 mins.

Prep a little zing!

  • Thinly slice the chilli (deseed for less heat). Finely chop the coriander and mix half into the dish.

Finish & serve

  • Dish up the potato and bean bake, then drizzle with yogurt, scatter over the chilli (to taste) and sprinkle the remaining coriander on top.
