Before you start

  • 1x mixing bowl
  • 1x large non-stick frying pan
  • 1x saucepan

Prep your kofta & veg

  • In a bowl, mix a quarter of the spice into the mince. Lightly season to taste with salt and, using your hands, shape into 10 even-sized ovals (20 for 4 portions).
  • Halve the courgette lengthways and slice into ½cm half-moons. Peel and thinly slice the onions, then deseed and thinly slice the peppers.

Time to fry!

  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the kofta for 2 mins, until browned.
  • Tip in the veg and fry for 5-7 mins.

Simmer the sauce

  • Squeeze in the ginger & garlic paste, scatter in the remaining spice mix and cook for 1 min.
  • Pour in the passata and 150ml water. Simmer for 5-7 mins, until the sauce reduces slightly and the kofta are cooked.

Cook the couscous

  • Meanwhile, cook the couscous in boiling water for 8-9 mins, then drain.
  • Finely chop the parsley, coriander and spinach.
  • Stir the herbs and spinach through the couscous.

Dish up

  • Serve the kofta with the couscous tabboleh.
