Moreish miso veg & butter bean stew

This’ll warm your cockles on a chilly day! A satisfying stew of carrot, leek, cabbage, roast potatoes and creamy butter beans, in a sage, garlic and miso sauce, for a deeply savoury umami hit. Served with roasted broccoli, it’s lip-smackingly good.

Get the spuds going

  • Heat your oven to 220ºC/fan 200ºC/gas 7.
  • Cut the potatoes into 1cm cubes and put them on a baking tray lined with baking paper. Spritz with cooking spray, lightly season and roast for 15 mins.

Time to fry

  • Meanwhile, halve the carrots lengthways and slice into ½cm-thick half-moons. Trim the leeks and halve them lengthways, then thinly slice into half-moons. Core, trim and thinly slice the cabbage, and finely chop the parsley.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the carrots, leeks and cabbage for 4-5 mins until softened.

Bring the zing!

  • Peel and crush the garlic. Zest and halve the lemon, then finely chop the sage leaves.
  • Add the garlic, lemon zest and sage to the pan along with the miso paste, then tip in the butter beans and their water.
  • Crumble in half the stock cube, pour in 200ml water (use all the stock and 300ml water for 4 portions) and stir well. Simmer for 6-8 mins until reduced by half.

Roast that broccoli

  • Trim the broccoli, then add it to the baking tray. Spritz with cooking spray and return to the oven for 10-12 mins until the potatoes and broccoli are soft.

Add some finishing touches

  • Remove the beans from the heat and leave to cool a little, then stir in the roast potatoes, parsley and yogurt.
  • Squeeze in the juice from half the lemon (to taste), then cut the other half into wedges.
  • Top the stew with the roasted broccoli and serve with the lemon wedges for squeezing.
