One-pot Cajun beef & loaded rice

A crowd-pleasing, filling feast with just one pan to wash up at the end? Yes please! Juicy strips of bavette steak are cooked on top of rice simmered with onions, red pepper and mushrooms, in a chilli and Cajun-spiced tomato sauce. De-lish!

Before you start

  • large saucepan

Chop, chop!

  • Peel and finely dice the onions, and deseed the peppers and dice into 1cm squares. Thinly slice the mushrooms.
  • Finely dice the chillies (deseed for less heat). Peel and crush the garlic, then finely chop the thyme leaves.

Sauté the veg

  • Dissolve the stock cube in 400ml boiled water (650ml for 4 portions).
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry three-quarters of the onions, the peppers and mushrooms for 5 mins.

Spice things up

  • Add the chillies (to taste), garlic, thyme and Cajun spice and cook for 2 mins. Stir in the stock, tomato purée and rice.
  • On a separate board, trim any visible fat from the steaks, then thinly slice against the grain.

Get simmering

  • Arrange the steak on top of the veg, rice and sauce in the frying pan. Bring to the boil and cover with foil or a tight-fitting lid.
  • Simmer over a low heat for 20-25 mins, stirring halfway through.

Plate up

  • Thinly slice the spring onions. Stir half through the beef and rice and lightly season to taste with salt.
  • To serve, top the Cajun beef with the remaining onion and spring onions.
