Spicy one-pot chipotle steak pilaf

Kick dull dinners to the kerb with this low-faff pilaf! We’ve front-loaded the prep – bavette steak, onions, peppers, mushrooms and chillies are sliced and sautéd, then slow simmered with rice in stock spiced with smoky chipotle, ginger and garlic. Chop and sprinkle coriander and spring onion and you’re done! Delicious.

Before you start

  • 1 large non stick frying pan with a lid

Start prepping

  • Peel the onions and cut each into 8 wedges. Deseed and thinly slice the peppers, and quarter the mushrooms. Finely dice the chillies (deseed for less heat).

Soften the veg

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers, mushrooms and chillies (to taste) for 5 mins.
  • Dissolve half the stock cube in 400ml boiled water (use all the stock and 600ml water for 4 portions).

Ramp up the flavour!

  • On a separate board, trim any visible fat from the steaks, then thickly slice against the grain.
  • Tip the steak into the pan and cook for 3 mins.
  • Stir in both pastes (chipotle to taste) and cook for 2 mins, then add the stock, rice and tamari. Turn the heat down to medium-low, cover with a lid and simmer for 12-15 mins (15-18 mins for 4 portions) until the rice is cooked through.

Add your final touches

  • Thinly slice the spring onions, and finely chop the chives (or half the coriander).
  • Stir half the chives (or all the chopped coriander) through the rice, then scatter over the spring onions and remaining chives (or coriander leaves) and serve.
