Speedy one-pot harissa chicken & bean stew

Give your dinner a North African-inspired twist! Chicken, borlotti beans and courgettes simmer in a rich harissa-spiked tomato sauce, while preserved lemon adds bright, zesty pops. A drizzle of cooling yogurt and fresh coriander finish this quick one-pot in style.

Before you start

  • 1x large non-stick saucepan

Prep your veg

  • Peel the onions and cut each into 8 wedges, then dice the courgettes into 2cm chunks. Peel and finely chop the garlic.

Create a stir!

  • Spritz a large non-stick saucepan with cooking spray and put it over a medium heat. Fry the onions, courgettes and garlic with the chicken for 5-7 mins until the veg are softened and the chicken is browned.

Add the stock & simmer

  • Meanwhile, finely slice the preserved lemon and discard any pips.
  • Tip the harissa, preserved lemon and passata into the pan.
  • Crumble in half the stock cube (all of it for 4 portions), then add the beans with their water, along with 100ml water (150ml for 4 portions). Simmer for 5-7 mins (7-9 mins for 4 portions), until the sauce is thickened and glossy and the chicken is cooked through.

Add your finishing touches

  • While everything simmers, finely chop the coriander, then stir half into the pan.
  • To serve, drizzle the yogurt over the beans and scatter with the remaining coriander.
