One-pot Moroccan chicken tagine with giant couscous

This super-simple stew lets some big flavours do the talking! Tomatoes, chicken and onion are sizzled, then simmered in a sauce scented with ras el hanout. Chickpeas, citrussy fresh and preserved lemons and giant couscous raise the stakes, and fresh parsley gives a finishing touch.

Before you start

  • 1 large non stick frying pan with lid

Prep & fry

  • Peel the onions and cut into 8 wedges.
  • On a separate board, trim any visible fat from the chicken, then cut into bite-size chunks.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, chicken and tomatoes for 5 mins.

Create a stir!

  • Chop the preserved lemon and discard any pips.
  • Add the oregano, ras el hanout and garlic paste to the pan and cook for 2 mins. Tip in the chickpeas and their water, the passata, the zest and juice of the lemon and the chopped preserved lemon. Crumble in half the stock cube along with 250ml boiled water (use all the stock and 350ml water for 4 portions).

Cook the couscous

  • Stir in the couscous, cover with a lid and simmer for 11-13 mins until the chicken and couscous are cooked through.

Finish & serve

  • Finely chop the parsley, add it to the pan and serve.
