Super-quick one-tray pork fajitas

Our fajita-style pork bowl will speed you from starving to satisfied in just 20 minutes. Pork strips go under the grill with onions, peppers and filling black beans, plus the fiesta flavours of our Mexican spice mix. It's all served with zingy salad and drizzle of cooling yogurt. Before you start

  • 1x foil-lined baking tray
  • 1x measuring jug

Get grilling

  • Heat your grill to high.
  • Peel and thinly slice the onions, and deseed and thinly slice the peppers. Drain and rinse the beans.
  • Put the onions, peppers, beans and pork on a large baking tray lined with foil. Stir in the tomato purée and half the spice mix.
  • Spritz with cooking spray and grill for 6-8 mins, until the veg begins to blacken.

Prep the toppings

  • Meanwhile, roughly chop half the coriander. Trim and thinly slice the lettuces, and cut the lime into wedges.

Add some oomph!

  • Boil a half-full kettle.
  • Dissolve the stock and remaining spice mix in 200ml boiled water (300ml for 4 portions).
  • Pour the stock over the tray with the veg and pork, add the chopped coriander and mix well. Return to the grill for 3-4 mins, until the pork is cooked through.

Dish up

  • To serve, top the fajita pork and veg with the lettuce. Drizzle over the yogurt and a little lime juice (to taste), top with the rest of the coriander and put any unsqueezed lime wedges on the side.
