One-pot chicken & chickpeas with giant couscous

With sun-dried tomato paste and our smoked paprika and oregano blend, this stew-pendous dish is serving serious summer vibes! Into the pot go chicken, onions, peppers and tomatoes, simmered with our easy squeezy pastes, plus chickpeas and giant couscous. Lemon and fresh parsley give extra zing.

Before you start

  • 1 large non stick frying pan

Prep the veg

  • Peel and thinly slice the onions, then deseed and thinly slice the peppers.

Sauté & stir

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers, tomatoes and chicken for 5 mins.

Things get saucy!

  • Stir in both pastes and the paprika blend and cook for 1 min.
  • Add the couscous, chickpeas with their water and passata. Add the stock and pour in 400ml water (450ml for 4 portions) and stir well.
  • Simmer for 15 mins until the chicken is cooked through, the couscous is soft and the sauce has reduced to coat everything.

Add some zing

  • Squeeze in the lemon juice (to taste).
  • Finely chop the parsley and stir half through the pan.

Dish up

  • Sprinkle over the remaining parsley and serve.
