Peri-fast chicken pasta

Juicy strips of chicken thigh are jumbled in a hot pan with onion, red pepper, tomatoes and peas, then tumbled with wholesome wholewheat pasta tubes and a lime-spiked peri-peri sauce. It’s fast, filling and thrilling!

Before you start

  • 1x medium saucepan
  • 1x non-stick frying pan

Set the pasta simmering

  • Cook the pasta in boiling water for 8-9 mins, then drain.

Ace the base

  • Meanwhile, peel and thinly slice the onions, and deseed and thinly slice the peppers.
  • On a separate board, trim any visible fat from the chicken, then cut into thin slices.
  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions, peppers, chicken and tomatoes for 4-5 mins.

Things get saucy!

  • Add the garlic paste and peri-peri. Cook for 1 min, add the stock powder and pour in the passata and 100ml water (150ml water for 4 portions).
  • Stir well and simmer for 5 mins (7 mins for 4 portions), until the chicken is cooked through.
  • Add the peas and cook for 2 mins.

Add your final touches

  • Chop half the coriander. Halve the lime and cut 1 half into wedges.
  • Stir the pasta and chopped coriander into the sauce and squeeze in the juice from half the lime (to taste).
  • Serve the chicken pasta with the lime wedges and the remaining coriander scattered over.
