Peri-quick duck pasta

Sounds quackers, just works – this fast-food fusion is a joy to eat. Tender strips of duck are sautéed with onions, peppers and tomatoes, then simmered in a garlicky tomato sauce spiced with our sunny peri-peri blend. Peas and pasta spirals add filling power, then lime and coriander make it a party!

Before you start

  • 1x medium saucepan
  • 1x non-stick frying pan

Set the pasta simmering

  • Cook the pasta in boiling water for 8-9 mins, then drain.

Slice & fry

  • Meanwhile, peel and thinly slice the onions, and deseed and thinly slice the peppers.
  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions, peppers, duck and tomatoes for 4-5 mins.

Things get saucy!

  • Add the garlic paste and peri-peri and cook for 1 min.
  • Crumble in the stock cube, then pour in the passata and 100ml water (150ml for 4 portions). Stir well and simmer for 5 mins (7 mins for 4 portions), until the duck is cooked through.
  • Add the peas and cook for 2 mins.

Add your final touches

  • Chop half the coriander, then halve the lime and cut 1 half into wedges.
  • Stir the pasta and chopped coriander through the sauce, and squeeze in the juice from half the lime (to taste).
  • Serve the duck pasta with the lime wedges and scatter over the remaining coriander leaves.
