One-pot peri-peri chicken pilaf

Kick dull dinners to the kerb with this low-faff pilaf! Flavour-packed chicken thighs are fried with onions, peppers, tomatoes and chillies, with peri-peri bringing the party vibes. Then there’s the super-satisfying rice, soaking up all those vibrant flavours and letting them shine. Delicious!

Before you start

  • 1 large non stick pan with lid

Prep the chicken & veg

  • On a clean board, trim any visible fat from the chicken, then cut into bite-size chunks.
  • Peel and thinly slice the onions, then deseed and thinly slice the peppers. Finely dice the chillies (deseed for less heat).

Time to fry

  • Spritz a large, deep non-stick frying pan with cooking spray and put it over a medium-high heat.
  • Fry the chicken, onions, peppers, chillies and tomatoes for 6-7 mins until the chicken is browned all over.

Let it all bubble away nicely

  • Add the peri-peri spice mix and tomato purée to the pan and cook for 1 minute. Crumble in half the stock cube, pour in 500ml boiled water (use all the stock and 700ml water for 4 portions), add the rice and stir well.
  • Cover the pan with a lid and simmer for 10-12 minutes, until the rice and chicken are cooked through and the stock has reduced.

Add your finishing touches

  • Finely chop the parsley.
  • Stir the parsley and the juice of the lemon into the rice and serve.
