Quick-win chicken tikka masala

A pouch of deliciously spiced sauce and ready-diced chicken breast make light work of this crowd-pleasing curry. Just fry chopped onions, red peppers and baby toms with the chicken, sprinkle in some cumin, then simmer with the sauce. A swirl of Greek yogurt gives it that silky-smooth masala finish we all know and love. Served with basmati rice.

Before you start

  • 1 medium saucepan
  • 1 large non stick frying pan

Dice, dice, baby!

  • Peel and finely dice the onions, then deseed the peppers and dice into 2cm squares. Finely chop the coriander.

Set the rice simmering

  • Cook the rice in boiling water for 10-12 mins, then drain.

Things get saucy!

  • Meanwhile, spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers, chicken and tomatoes for 5-6 mins.
  • Add the tomato purée and ground cumin and cook for 1 min.
  • Pour in the sauce, stir in 100ml water (150ml for 4 portions) and simmer for 5 mins, until the chicken is cooked through.

Finish & serve

  • Remove the pan from the heat and leave to cool a little, then stir in the yogurt and three-quarters of the coriander.
  • Serve the chicken tikka masala on a bed of the rice and scatter over the remaining coriander.
