Cheat’s speedy chicken korma with rice

Everyone’s favourite curry is ready in a hurry thanks to some clever chef cheats! Our special ginger & garlic pastes perk up sizzled chicken, onions, peppers and tomatoes, then in goes our ready-made curry sauce. A swirl of yogurt, a scattering of coriander and you’re ready to serve with rice.

Before you start

  • 1 large saucepan
  • 1 large non stick frying pan

Boil the rice

  • Cook the rice in boiling water for 10-12 mins, then drain.

Prep & fry

  • Meanwhile, peel the onions and cut each into 8 wedges, then deseed and finely dice the peppers.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, peppers, chicken and tomatoes for 5 mins, until the chicken is browned all over.

Things get saucy!

  • Add the ginger & garlic paste and curry powder to the pan and cook for 1 min.
  • Pour in the curry sauce with 150ml water (200ml for 4 portions) and simmer for 5 mins, until the chicken is cooked through.

Add your finishing touches

  • Finely chop the coriander and stir it through the curry along with the yogurt.
  • Serve the curry on top of the rice.
