Before you start

  • 1 large saucepan
  • 1 large non stick frying pan

Set the pasta simmering

  • Cook the pasta in boiling water for 8-9 mins, then drain.

Start your sauce

  • Meanwhile, peel and finely dice the onions. Peel and crush the garlic, and finely chop the basil.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, garlic, chicken and tomatoes for 5 mins.
  • Stir in the tomato purée and oregano and cook for 2 mins.

Add some oomph!

  • Crumble in the stock, then pour in 150ml water (250ml water), add the passata and capers and stir well. Simmer for 3-4 mins, until the chicken is cooked through.
  • Tip in the pasta, add half the basil, squeeze in the juice from half the lemon (to taste) and stir again.

Plate up

  • Cut the remaining half lemon into wedges.
  • Sprinkle the remaining basil over the pasta, add the lemon wedges for squeezing and serve.
