Prawn nasi goreng

Nasi goreng is how Indonesia does fried rice. And this is how Slimming World Kitchen does nasi goreng! It features spicy rice, plump prawns, green beans and a glorious fried egg on top, all drizzled with a simple chilli sauce and served up with cooling cucumber and fresh tomatoes.

Boil the rice & beans

  • Trim and halve the green beans.
  • Cook the rice in boiling water for 10-12 mins, adding the beans for the final 2 mins, then drain.

Make your chilli sauce

  • Meanwhile, finely dice the chilli (deseed for less heat).
  • In a bowl, stir together the tomato purée, tamari and diced chilli (to taste).

Create a stir!

  • Peel and thinly slice the shallots, then peel and crush the garlic.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Tip in the shallots and fry for 3-4 mins until nicely browned.
  • Add the garlic and prawns and fry for 2 mins.
  • Tip in half the chilli sauce and stir to coat everything. Cook for 1 min or until the prawns are pink and cooked through, then add the cooked rice, beans and half the remaining chilli sauce.
  • Lightly season, stir everything together and transfer to plates.

Sizzle the eggs

  • Wipe the frying pan, spritz with cooking spray and put it over a medium-high heat.
  • When the pan is hot, crack in 2 eggs, saving the rest for another dish (use 4 eggs for 4 portions) and fry until theyʼre cooked how you like them.

Plate up

  • Thinly slice the cucumber, and halve or quarter the tomatoes. Arrange them alongside the rice, then top with 1 fried egg per portion.
  • To serve, thin down the remaining chilli sauce with a splash of water and drizzle it over the rice, eggs and salad.
