Before you start

  • 1 ovenproof baking dish.

Chop, chop!

  • Heat your oven to 220ºC/fan 200ºC/gas 7.
  • Quarter the potatoes, then dice the carrots into 3cm cubes.
  • Peel the onions and cut each into 8 wedges.

In goes the veg...

  • Put the potatoes, carrots and onions into a large non-stick baking dish. Spritz with cooking spray and roast for 15 mins.
  • Dissolve half the stock cube in 300ml boiled water (use all the stock and 400ml water for 4 portions).

Sort the steak

  • Meanwhile, on a separate board, trim any visible fat from the steaks, then thickly slice against the grain. Finely chop the rosemary leaves.
  • Once the veg has roasted for 15 mins, add the steak, rosemary, garlic paste, mustard and Hendersonʼs Relish to the baking dish, along with the stock. Stir well and bake for 15 mins.

Finish & serve

  • Trim the broccoli and put it on top of the steak, veg and potatoes. Bake for 10 mins, or until the steak is cooked through.
  • Finely chop the parsley, then stir it through the baking dish to serve.
