Sage & onion pork with quick apple pickle

Sage & onion pork with quick apple pickle

Not your average pork and apple! Pork mince is fried with onions, carrots, fragrant sage and garlic, simmered with peas in a light savoury stock, and given a creamy twist with a swirl of yogurt. Crispy roasted potatoes take this plateful up a notch, while a quick apple and chive pickle adds a fresh, tangy contrast.

Before you start

  • 1x baking tray lined with baking paper
  • 1x small bowl
  • 1x non-stick frying pan

Pop the potatoes in the oven

  • Heat your oven to 230ºC/fan 210ºC/gas 8.
  • Cut the potatoes into 2cm cubes, then put them on a baking tray lined with baking paper. Spritz with cooking spray, lightly season and roast for 25-30 mins.

Time to pickle!

  • Meanwhile, quarter, core and finely dice the apples. Finely chop the chives.
  • Put the apples, half the chives and all the vinegar into a small bowl, then lightly season with salt. Stir well and set aside.

Prep & fry

  • Peel the onions and dice into large pieces. Dice the carrots into 1cm cubes.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions and carrots for 5-7 mins until softened.

Cook the pork

  • Peel and finely chop the garlic, then finely chop the sage leaves.
  • Add the pork mince, garlic and chopped sage to the frying pan and cook for 4-5 mins, breaking up the mince with a wooden spoon, until browned all over.
  • Crumble in the stock cube, add the peas and pour in 100ml water (150ml for 4 portions). Cook for another 2-3 mins, until the peas are hot, the liquid loosely coats the pork and the pork is cooked through.

Bring it all together

  • Leave the pork mince to cool for a few mins. Stir in the yogurt, then plate up the pork and the roast potatoes.
  • To serve, top with the apple pickle and sprinkle over the remaining chives.
